    A very large but thin bacteria could exist -- this maximizes surface area and minimizes interior. It could survive by capturing animals that trample on it and holding them til they die, expanding out over them to digest them after they've bit the dust.

    There is a single celled organism that is far larger than 1mm, in fact it's even bigger than an insect. It's the Caulerpa, a kind of green Algae. They can grow up to 12 inches, but do this by using specialized evolved organelles that imitate plant structures like stems and roots. So a bacteria might be able to get larger but would need to evolve some very specialized organelles.

    Nature doesn't want anything. What you're looking for here is evolution. The basic concept is the following: 1) organisms produce slightly different offspring, some are better and some worse (mutation and recombination) 2) Organisms which are better at reproducing become more common because, well, they make more offspring (natural selection) 3) These traits that were selected for then get passed on to future generations (heredity)
